Nidya and I make this easy recipe for pico de gallo and it is really good! From Richard Sandoval’s New Latin Flavors: Ingredients 12 ounces large tomatoes, seeded and cut into 1⁄2 inch dice 2 tablespoons finley chopped red onion 1 tablespoon finely chopped fresh cilantro 1 tablespoon fresh lime juice 1 serrano chile, seeded and finely chopped 1 teaspoon soy sauce Kosher salt Instructions Combine all of the ingredients in a medium bowl.

Grandma King's Banana Bread

My grandma used to keep a box of note cards of her recipes, written in neat cursive and parceled together with a rubber band. I used to eat this banana bread for breakfast when visiting. After baking, stick a toothpick or knife in the bread to check if it’s done.
